What size headers are you guys using on your SBC race engines?  1-7/8, 2". 2-1/8?

I run 2 1/8" just for the look. My heads have the 7 bolt pattern in them . stock can only go to 1 3/4" before you have to run adapters.

I just built a set for mine and they are 2 inch . When I ran the collector headers they were stepped 1 7/8 to 2 inch . The zoomies are a little slower

Mine are stepped from 1.3/4 to 2"  and have the shape of funny car zoomies.
Stepped are about 2" in length and the pipes are 28-30" long
You can see where the blue heat mark ends, no idea if that is good or bad. It did not noticably change going from N/A to nitrous.

Last time out It took an 80 jet on the first kit and 72 on second. Both big shot plates. Second kit came in on the shift.
